The Spice Cook is for all cooks, from beginners to the more advanced cook, anyone who wants to create authentic homemade food. By having a choice of ready blended spices, you can experiment safely without spending too much on spices which you may only use rarely.
The Spice Cook often gets requests for an easy rice recipe. Here is our own way of making tasty quick rice.
Easy Pilau Rice
Use mugs as you measure but be consistant and use the same one!
Ingredients: 1 mug good quality basmati rice, 2 tsp cooking oil, 6 cloves, 1" piece cinnamon, 1 bay leaf, 1tsp salt, 1 tsp turmeric. ( For white rice leave out the turmeric) Stir well.
Method: Wash rice throughly until the water runs clear. Place in a large microwaveable bowl. Add 2 mugs boiling water and all the other ingredients.Cover in clingflim leaving a slight air gap at one end. Cook on medium for 12 minutes. Leave to stand for 12 minutes. Fluff up with a fork. You may need to adjust the cooking time depending on your microwave. Remove the whole spices and adjust the seasoning before you serve.
Tips: Experiment with this, you can add spices or leave them out. Sometimes I add a few red lentils to the the rice, for a slightly diferent texture. The main rule to remember, is that the ratio of boiling water to the rice is, the amount of rice plus one mug, i.e.1 mug of rice to 2 of water!
