The Biltong Story
The Dutch arrived in South Africa in the 17th Century and with them brought recipes for dried meat from the Old World. Biltong as we know it today, is a rich inheritance from the pioneering South African forefathers who sun dried meat during their trek across the African Subcontinent. This spicy salted air dried meat has sustained the people of South Africa ever since the early days of the Voortrekkers, 400 years ago. This delicacy is now catching on worldwide.
Biltong is very high in protein and my biltong is almost fat free.
There are many variations of the end product, but the original basis behind biltong is the same, comprising of a blend of vinegar, salt, sugar, coriander, and other spices. All of these were in abundance in the then Cape Colony. Various brine recipes and marinades were created ever since and continue to be handed down for generations to come!
